Choc Chia Coconut Pudding

So I havent posted in a while! Sorry!
This is a recipe I came up with a while ago. Tastes similar to Le-rice.

It is quick, simple and easy to prepare.

What you will need:
1 can of coconut milk or cream
1/2 cup Shredded Coconut
4 tbsp Chia Seeds
2 tbsp honey
1 tsp cinnamon
1 scoop Choc Protein Powder

What to do:
In a bowl add all of the ingredients and mix well, transfer the mixture into a mason jar and place in the fridge.
Leave to soak overnight or for at least 2 hours. Serve with a sprinkle of cinnamon or coconut.

Clean Gold Chicken Curry.

I have had quite a few requests for dinner ideas lately so I have decided to post one of my favourite clean dinners.

My Clean Gold Chicken Curry is perfect for dinner as it is simple and easy to prepare.

What you will need:

1-2 Chicken Breasts (Skin Off)
Pumpkin (diced) – Just buy the normal pre-cut packaged size
Yellow Thai Curry paste
1/2 banana
1/2 cup low sodium vegetable stock
Raw cashew nuts (1 packet)
1/2-1 tsp freshly ground turmeric
1 tsp minced ginger
1 tbsp organic shredded coconut
3 tbsp coconut milk (optional)

What you need to do:

Combine the banana, yellow curry paste, turmeric, ginger, coconut and half of the cashew nuts in a small blender until ingredients form a smooth paste.

In a saucepan place the pumpkin, chicken, left over cashews, coconut milk and stock and bring to the boil. Then add in the paste.

Stir well and allow to cook for roughly 20-25 minutes or until the chicken has cooked through.

Depending on the consistency you are after:
- Add more stock if mixture is too thick
- Add some almond meal to thicken the mixture
The pumpkin and chicken amounts can be increased or reduced depending on personal preference.

Serve hot on its own or with brown rice/quinoa.

Cucumber & Mint Infused Water

I LOVE water!
It is my favourite drink, as I don’t like soft drinks at all.

Some people find it hard to drink the required amount of water each day, so here is my tip to liven things up a bit.

In a jug place some sliced cucumber and mint leaves and leave for 1 hour.

Benefits of Cucumber:
*Quick pick me-up
*Rehydrates body and replenishes daily vitamins
*Aids in weight loss and digestion
*Reduces cholesterol and controls blood pressure
*Promotes joint health, relieves gout and arthritis pain
*Rich in vitamin A, B1, B6, C & D, Folate, Calcium, Magnesium, and Potassium

Benefits of Mint:
*Aids in weight loss and digestion
*Assists with oral health
*Good for respiratory system – assists some sufferers of asthma

You can try a range of different ingredients to spice up your water, give it a try.

Amaze-Balls

Another quick, easy and tasty Protein Ball recipe!!!

This recipe suits those who aren’t too fond of the strong Peanut Butter taste like my last recipe Choc Chip Oat Bites

What you will need:
2 tbsp Natural Peanut butter
2 tbsp Cacao
1 tbsp LSA
1 scoop choc protein powder (I use Dymatize ISO 100 in gourmet choc)
3 tsp coconut oil (melted)
1 tsp cinnamon
Coconut

What to do:

Put all ingredients (except coconut) into a bowl and combine (can use your hands if easier)
If mixture still seems too dry and is not holding add in a tiny bit more coconut oil.
Roll into small balls and then roll into the coconut.
Place balls in the fridge to set. I found the longer they were in the fridge the better the texture.

Clean Raspberry and Banana Muffins.

ImageI think I am slightly obsessed with clean treats!
I feel like I am forever in the kitchen baking and experimenting!

These muffins are scrumptous!

Serve hot or cold with a nice cup of green tea!

What you will need:
2 Bananas (mashed)
Handful of Raspberries
1 tsp vanilla extract
2 cups of almond meal
1 tsp baking powder
Liquid Stevia (to taste)
1/4 cup LSA
Handful of almonds (whole or slivered)
1 egg (beaten)

What to do:
In a bowl, combine the almond meal, LSA, almonds and baking powder.
Then add in the bananas, vanilla extract, stevia and egg.
Combine ingredients well, then stir through the raspberries.

Spoon evenly into a sillicone muffin tray and bake in the oven at 180 degrees for 20 minutes or until muffins bounce back.

Makes 6.

Cereal Nut Crunch.

These were actually meant to be bars, however the mixture failed to hold together.
They probably just needed a bit more peanut butter or coconut oil.

None the less it still tastes great.
You can use this as a cereal topper or as a cereal and just add almond milk.

What you will need:
1 cup of rolled oats
2 tbsp natural peanut butter
1/4 cup melted coconut oil
3 tbsp honey
Heaped handful of mixed nuts (almonds, cashews, brazil, walnuts, sunflower seeds etc)
1/2 tsp baking powder
3 tbsp oat meal
1/4 puffed rice
1/2 tsp vanilla extract
1/4 cup melted dark chocolate

What to do:
In a bowl mix together all the dry ingredients(except the nuts). Then add in all the wet ingredients.
Press mixture into a shallow dish and top with the mixed nuts ensuring they are also pressed down into the mixture.

Bake at 170 degrees for 20 minutes.
Allow to cool and then place in the fridge for 1 hour.

Mixture can then be crumbled and stored in an airtight container.

Weekend Protein Pancakes.

These are my all time favourite weekend breakfast!

They taste amazinggggg and are so easy to prepare!

Here’s what you’ll need:

80g rolled oats
2 whole eggs
5 egg whites
2 scoops protein powder (I use ISO 100 choc flavour)
1 banana sliced
150g mixed berries
2 tbsp natural peanut butter
Cinnamon
2 tbsp coconut oil

What to do:

In a bowl cook the oats in water in the microwave.
Add the eggs and egg whites and beat.
Mix in the protein powder, banana, berries and peanut butter.
Shake some cinnamon over the mixture (you can add natural sweetener if you like).

Place on pan on high heat and add the coconut oil.
Spoon in the mixture a little at a time to make pancakes that are roughly 2-3 inches in diameter.
Flip when bubbles appear on the surface.
Serve with strawberries and dark chocolate chips (or whatever toppings you fancy)

Clean and Simple Quiche.

I absolutely love clean dishes that are quick and easy to make.

I made a few different types, and really it is up to you what ingredients you use.
I made a spinach, cottage cheese and onion batch, its entirely up to you!

What you will need:

7 eggs (4 eggs and 3 egg whites)
1 Heaped tbsp of cottage cheese 
Capsicum
Brown Onion
Tomato
Mushrooms
Mountain Bread
Silicone muffin tray (if you don’t have one just grease an ordinary muffin tray)

What to do:

Cut all vegetables into small cubes.
In a bowl whisk together the eggs, then add the cottage cheese and vegetables.
Mix well.
Take a piece of mountain bread and cut into quarters.
The mountain bread will be used as an alternative to pastry. 
Place 2 quarters into each section of the tray, ensuring one layer is done at a time.

Then evenly pour your mixture into the mountain bread.

Bake at 160 degrees for 20-25 minutes or until egg is cooked.

Makes 6

Choc Chip Oat Bites

Finally…

A recipe that actually tastes nice!
I have tried so many different recipes for protein/oat bites and never liked the taste.
These would have to be the best ones so far.

What you will need:

1 cup of rolled oats
1/2 cup of coconut (shredded or flakes)
1/3 cup of protein powder (i used choc flavour)
1/3 cup of flaxseed
4 heaped tbsp of natural peanut butter 
1/3 cup of honey (could substitute for coconut oil and stevia)
1 cap of vanilla extract
Choc chips (dark)

What to do:

Combine all ingredients well.

Set aside in the fridge for 20-25 minutes

Then roll into balls and serve

Clean Strawberry Protein Chocolate.

This is one of my favourite clean treats.
So simple and easy to make and even easier to eat!

What you will need:
2-3 tbsp coconut oil (the one from safeway with the orange label is the best)
1 scoop protein powder
1 tbsp shredded coconut
1 cap vanilla essence
Handful of strawberries

What to do:
Firstly dice the strawberries into small piece and place in an empty ice cube tray (fill each section to just under half way

In a bowl melt the coconut oil, add all other ingredients until combined.
The mixture should be runny in consistency.

Evenly pour the mixture over the strawberries and place in the freezer until set.
