I have had quite a few requests for dinner ideas lately so I have decided to post one of my favourite clean dinners.
My Clean Gold Chicken Curry is perfect for dinner as it is simple and easy to prepare.

What you will need:
1-2 Chicken Breasts (Skin Off)
Pumpkin (diced) – Just buy the normal pre-cut packaged size
Yellow Thai Curry paste
1/2 cup low sodium vegetable stock
Raw cashew nuts (1 packet)
1/2-1 tsp freshly ground turmeric
1 tsp minced ginger
1 tbsp organic shredded coconut
3 tbsp coconut milk (optional)
What you need to do:
Combine the banana, yellow curry paste, turmeric, ginger, coconut and half of the cashew nuts in a small blender until ingredients form a smooth paste.
In a saucepan place the pumpkin, chicken, left over cashews, coconut milk and stock and bring to the boil. Then add in the paste.
Stir well and allow to cook for roughly 20-25 minutes or until the chicken has cooked through.
Depending on the consistency you are after:
– Add more stock if mixture is too thick
– Add some almond meal to thicken the mixture
The pumpkin and chicken amounts can be increased or reduced depending on personal preference.
Serve hot on its own or with brown rice/quinoa.
