Sweet Potato Zucchini & Feta Burgers

Sweet Potato.Zucchini.Feta.Burgers

Oh these are my new favourite!!

The only thing not so clean is the feta cheese, however it is okay in moderation (could swap for cottage cheese)

I served them on their own with broccoli, but they would taste yummy in a seeded bun with salad.

So here is what you’ll need:
1 medium sized zucchini (peeled and grated)
500g sweet potato
100g Feta Cheese (crumbled)
1/4 cup pine nuts
3/4 cup oats + extra 2/3 cup oats
1 heaped tbsp chives
2 tbsp cumin
olive oil

What to do:
Preheat oven to 170 degrees fan forced.
Line the oven tray with baking paper.

Peel and cut the sweet potato into small (2cm) pieces and lay evenly on the tray, sprinkle the cumin and drizzle with a tbsp of olive oil.
Bake in the oven for approx. 25min or until golden brown.
The sweet potato is then mashed and left to cool.

Once the sweet potato has cooled add in the zucchini (ensure excess water is removed before adding), feta cheese, pine nuts, chives and oats.

Using your hands combine ingredients well.
Once combined roll into even balls and flatten out to resemble a patty.
Roll the patties in the extra oats to coat the outside and then cook in a pan on medium heat for roughly 3 minutes each side.
